A Napa Wine Legend Meets A World Renowned Master Distiller

Dave Phinney, owner of Savage and Cooke Distillery, is living the spirit-filled California dream along with his master distiller Jordan Via. The two began their story in the spirit industry within the California wine community. Phinney founded Orin Swift Cellars before releasing The Prisoner, a block buster bottle that he eventually sold, and Via started as a winemaker before starting an apprenticeship with Stillwater Spirits which led to his involvement in founding Breckenridge Distillery in Colorado and working on Bob Dylan’s Heaven’s Door whiskey project.

The two united their interests while working on Phinney’s vision of implementing California’s farm-to-fork legacy into the world of whiskey. The spirits made by the distillery that sits on a historical World War II naval base come alive with ingredients like corn, barley and rye all sourced from a local farm set in the Vaca Mountains and the mineral-rich water that flows from land Phinney acquired in Alexander Valley. They throw in a vino element to each bottle made by finishing each batch in one of Phinney’s wine barrels which include Napa County Cabernet Sauvignon, Zinfandel and Grenache barrels from France. At the end of the day the brand’s sourcing, partners, process and location equate to a California born dream in a bottle, that awaits your sip.
