Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.

This can go toe to toe with Rare Breed and Old Forester 1920. Depending on the profile you prefer, I could see any being your favorite. It slays Noah's Mill and compares favorably to most Barrell batches and even Bardstown Discovery 4. The only reason I'm giving 4 instead of 5 stars is that there is just a hint of the Dickel profile underneath all the good stuff. If you like that profile or you are sensitive to it, you will probably enjoy this immensely.
